Mango Lemonade and a Break!!




  
Serves:2 
Recipe Type:Juices

Ingredients:
Mango puree -1 from large mango
Lemon - 1
Sugar - 1/4 cup
Water - 1 and 1/2 cup
Mint leaves(opt)

Method:
1.     Stir sugar in water until it is dissolved
2.     Add lemon juice and mango puree to the sugar syrup and stir well.
3.     Garnish with mint leaves if desired and serve cold.Enjoy!!

Mysore Pak



Mysore pak is a sweet made just from three main ingredients but the outcome is always heavenly.I always wanted to know the sweet history as to how it got its name,who created this name and recipe and here is what i found.
"Legend is that Mysore pak was first created in the kitchens of the Mysore Palace by a palace cook named Kakasura Madappa out of the above ingredients. The cook at the Mysore Palace kitchen simply made a concoction of besan, ghee and sugar. The sweet that was formed delighted the royalties so much that it became a "Royal Sweet". When asked its name, Madappa obviously didn't have its name, so he simply called it the ‘Mysore pak’, a delicacy from the Mysore Palace. The king relished the sweet so much that he got Madappa to set up shop outside the palace grounds so that it could be made available to common people"(SOURCE:https://en.wikipedia.org/wiki/Mysore_pak)

Makes around 18 - 22 pieces
Recipe Type:Sweets

Ingredients:
Besan/Chickpea flour - 2 cup
Ghee - 2 cup + 2 tsp
Oil - 2 Tbsp

For Sugar syrup:
Sugar - 2 cup
Water - as needed to immerse the sugar

Method:
  1. Sieve the besan to avoid lumps.Heat 1 tsp of ghee in a pan and roast the flour till its raw smell goes off .


2.Sieve the flour again.Melt ghee and add it to the roasted flour.Add 2 Tbsp of hot oil to it and mix well.


3.Heat a pan,add sugar and enough water to immerse the sugar.Let the sugar syrup reach single thread consistency.Once it reaches,add the besan-ghee mixture to the sugar syrup and keep stirring.


4.Keep the heat in medium and stir till the mixture gets thick and starts leaving the edges.Once done,pour it over a tray greased with a tsp of ghee.Let it cool for a few minutes.Cut them into rectangle shapes.Enjoy!!

Chocolate Banana Bread/Cake

It was a lazy summer evening,i sat in my patio flipping through some food magazines,this recipe caught my eyes and the next minute,I wore my food bloggers hat and started my journey of cooking and clicking :)Here goes the recipe....






INGREDIENTS:


All purpose flour- 2 cups
Sugar - 1 1/4 cup
Banana - 2 medium
Butter,softened - 1/2 cup
Buttermilk - 1/4 cup
Baking powder -1 tsp
Baking soda - 3/4 tsp
Salt - 1/2 tsp
Eggs - 2
Walnuts - 1/4 cup
Semi sweet chocolate chips - 1/4 cup + 2 Tbsp

MATERIALS REQUIRED:

Parchment paper
Baking pan -  9 in .x 5-in

METHOD:
  1. In a bowl,mix flour,baking powder,baking soda and salt.


2.In another bowl,whisk sugar and melted butter until it is creamy then add eggs,mashed bananas,buttermilk and vanilla.Whisk them well and add it to the flour mixture.


3.Add the walnuts and fold them lightly.


4.Then add the chocolate chips  and fold them again.


5.Pour this mixture into baking pan lined with parchment paper and bake at 350 deg for 60-65 minutes or until a toothpick inserted in center comes out clean.Cool it in a wire rack for 10 minutes before removing the parchment paper.Enjoy!!

Chocolate Avocado Milkshake

Who loves Chocolate?hmmm....almost everyone.Well,who loves Avocado?I see a few of them raising their hands :) Not everyone is a fan of avocado but this creamy avocado milkshake makes everyone go crazy and I bet it will be a regular recipe on your weekly menu!!
                          

Serves - 1 large glass
INGREDIENTS:

Ripe Avocado - 1
Choco  milk powder - 2-3 Tbsp (I used mead johnson choco milk powder)
Chilled milk -  2 cups
Chocolate shavings- for decoration(opt)
Sugar/Honey(opt)

METHOD:
  1. Scoop the pulp of avocado and add it to the blender along with choco milk powder and chilled milk.
  2. Blend it well till it is creamy and smooth.Add sugar if needed.I did not add sugar or honey to this milkshake.
  3. Sprinkle some chocolate shavings and serve cold.Enjoy!!

Corn Chaat/Masala Corn



A simple corn recipe with minimal ingredients!!
CAUTION:My whole family is addicted to this recipe and may cause the same to you too :)
Here goes the recipe......


Serves - 1
Time - 5 minutes
INGREDIENTS:

Corn kernels - 1 cup(I used frozen corn kernels)
Lemon juice - 1/2 tsp
Chaat masala - a pinch
Mango/Amchur pwd - a pinch (opt)
Red chilly powder - 1/4 tsp
Salt - to taste
Butter - 1 tsp

METHOD:
  1. Add the corn kernels along with chaat masala,red chilly powder,mango powder and melted butter.
  2. Mix them well and microwave it for 2 minutes or until the butter melts.Remove it from microwave,add the lemon juice with needed salt and mix well.Serve hot and enjoy!!

SCRIBBLED NOTES:
  • Adjust spice level as per your taste.
  • If using corn cobs,pressure cook them for  4 to 5 whistles in salt water.
  • Chaat masala has salt in it,so add salt accordingly.

Strawberry lassi


Yes,Yes,S......Summer is approaching fast and spring is going to end soon..Lastweek,we visited a few places featuring spring sale and bought some goodies back home.On the way we also stopped by the farmers market and bought vegetables and fruits..Back home,made this  lassi from freshly bought strawberries...needless to say everyone was berry happy :) Here goes the recipe...


INGREDIENTS:
  • Strawberries - 14
  • Yogurt - 1 1/2 cup
  • Milk - 1/2 cup
  • Sugar/Honey - 2 Tbsp or as to taste
  • Cardamon powder -  2 or 3 pinches
  • Ice cubes - 6 to 7
METHOD:
  1. Wash the strawberries,slice them in half trimming the leaves and add it to  a blender along with yogurt,milk,sugar and cardamon powder
  2. Finally add the ice cubes and give it a spin.Enjoy your lassi!!

  • Adjust sugar depending upon the sweetness of strawberry.

Homemade Yogurt/Curd

 Home made yogurt is healthy to eat and very easy to make,moreover it also saves money!!Right temperature is the key idea behind the making of yogurt.,Once you master this art,you would have to wave gooodbyeeeeee to the yogurt sections at supermarkets!!Yep :)Let's get started....




INGREDIENTS:

Curd - 1 Tbsp
Milk - 2 cups(I used whole milk!!)


METHOD:
  1. Heat milk in a vessel and bring it to boil.You can also use a candy thermometer to check the heat,it should be approx 160 deg Fahrenheit.Once it comes to boil,simmer the heat for a minute,remove from flame and let it cool.
     
  2. When milk reaches lukewarm temperature(approx 110 deg Fahrenheit),add a tablespoon of curd to it and mix well.

  3. Pour this into a jar and keep it in a warm place for 6-8 hours until the curd is set.
  4. Finally place the yogurt jar in refrigerator.


SCRIBBLED NOTES:
  • For every 500ml of milk,use 1 Tbsp of curd.
  • If you don't have a candy thermometer,check the milk temperature by inserting a finger,if you are able to withstand the temperature for 2 minutes then milk is warm and perfect for making curd.
  • If you are concerned about taste,use whole milk else use 2 % milk for fewer calories
  • Temperature should be warm for the curd to set.
  • Dont add starter curd to very hot milk,it will kill the bacteria in curd.
  • You can use plastic or glass jars to set the curd.Using glass jars would be best.
  • Dont shake or stir the jar during incubation time,yogurt bacteria will be disturbed and curd wont be set.
  • If the yogurt is set and doesn't taste sour,it means the incubation period wasn't enough..The longer yogurt ferments the more acidic or sour it becomes.Allow the mixture to incubate from 8 to 24 hours according to how sour tasting you would like the curd to be.
  • If you are using store bought yogurt as a starter,check the label and it should read "contain live culture" or "bacterial culture".
  • If the climate is too cold and if you have trouble setting the yogurt,preheat the oven to 180 deg Fahrenheit for 2 minutes and turn it off.Place the yogurt jar in the oven and switch on the oven light.Curd will be ready in 4 to 5 hours.

Bread Pizza

Bread Pizza is an instant way to end the sudden craving for cheesy pizza .A few of these and that of your favourite toppings and in no time you will see yourself munching these cheesy goodness...:)



INGREDIENTS:

  • Bread slices - 4
  • Onion - 1/2 (diced)
  • Capsicum - 4 Tbsp
  • Corn  - 3 Tbsp
  • Pizza sauce/Tomato sauce  - as needed 
  • Red chilli flakes - as needed
  • Italian seasoning - 2 to 3 pinches
  • Mozarella cheese - 3/4 cup
  • Butter for smearing the baking tray
  • Olive oil (opt)
  • Olives/Mushrooms or any toppings (opt)

METHOD:

  1. Butter the baking tray and arrange the bread slices.Spread a Tbsp of pizza sauce on  each slices.
  2. Add onions,capsicum,corn or any other toppings of your choice.
  3. Add  grated mozarella cheese on each bread slice.Sprinkle red chilli flakes and italian seasonings.
  4. Drizzle a few drops of olive oil.
  5. Preheat the oven to 375 - 400 degree Farenheit and bake it for 8 - 10 mts until the cheese melts and bread turns slightly golden brown...Munch homemade bread pizzas and Enjoy your day!!

SCRIBBLED NOTES:

  • Add cheese as per your liking
  • You can even cut the bread slices into circles if desired.
  • Adding olive oil gives extra flavour but its purely optional.
  • You can also use tawa to toast the bread slices

Onion Tomato Chutney



INGREDIENTS:
  • Onion - 1(big)
  • Tomatoes - 2
  • Red chillies - 3
  • Mint leaves - 1/4 cup
  • Coriander leaves - 1/4 cup
  • Coconut(grated) -4 Tbsp
  • Curry leaves - 1 string
  • Channa dhal - 1 Tbsp
  • Urad dhal - 1 tsp
  • Salt - to taste
  • Water - as needed


METHOD:
  1. Heat oil in a pan and add the urad dhal,channa dhal,red chillies,curry leaves and saute them till they are golden brown.
  2. Add  onion and saute them well followed by tomatoes.
  3. Add grated coconut.
  4. Finally add coriander and mint leaves,stir for 3 minutes.Remove it from heat and cool the mixture.Grind it with salt.Serve it with Dosa,Idly or Kuli paniyarams.Enjoy!!

SCRIBBLED NOTES:
  • Add water while grinding to adjust the consistency of chutney.
  • Adjust red chillies according to your spice level.
