Recipe Type:Soups
Duration:25 -40 minutes
Ingredients:
- Broccoli -1 (med)
- Potato -1(I used sweet potato)
- Peas -4 Tbsp
- Milk -1/4 cup
- Onion -1(med)
- Garlic cloves-3
For Garnishing:
- Olive oil/Butter -2 tsp
- Onion - 1(small) or shallots-3
- Broccoli florets-3 or 4
- Grated cheddar cheese-2 Tbsp
Method:
1.Pressure cook Broccoli,onion,potato,peas and garlic with required water.After the vegetables cools down,grind the vegetables into a puree.
2.Heat milk in a pan and add the pureed mixture along with the vegetable stock from pressure cooking the vegetables.Mix well and add pepper and salt.
3. Heat a pan and add butter followed by onion,broccoli florets.Saute them well.Spread on top of the broccoli soup with grated cheese.Serve it with croutons or rusk.I served it with a toasted bread!!
