Ghee Rice/Nei soru


Ghee rice is a must in our home during festivals and on special occasions.It is mostly served with thalsa and mango jam.There are many variations of ghee rice.Another variation is the addition of coconut milk to it.I will post the other version in another post.Here goes the recipe..


INGREDIENTS:

Basmati rice       - 2 cups
Onion(medium)  - 1
Ghee                 - 2½ Tbsp
Cinnamon          - 1 inch piece
Cardamon          - 2
Cloves               - 2
Cashews            - As needed
Raisins               - As needed
Fennel seeds      - ½ tsp

    METHOD:
1.Soak Basmati rice in water for 20mts ,drain and keep it aside.

2.Heat ghee in a pan and fry the cashews,raisins and keep it aside.

3.In the same pan add cinnamon,cardamon,cloves,fennel seeds and fry them.

4. Now add the drained rice and fry them for a few minutes followed by the addition of 3 cups of boiling water and salt.Adjust water accordingly.

5. Cook them till they are done and fluff them with a fork.

6. Serve hot with thalsa,thayir pachdi or any gravy of your choice.

Banana Bread/Cake (without egg)



Banana bread is a delicious recipe and easy to make.!It can be had as a terrific  breakfast or a scrumptious banana brunch!!While baking,the smell of the Banana bread fills the home and even the neighbours home and may trigger hunger:) So be ready to share your piece of cake...Well,"You cant have your cake and eat it too!!":)

INGREDIENTS:

Banana-2 Big mashed or pureed
All purpose flour - 2 cup 
Butter-100 gms
Granulated sugar-1 cup 
Milk- 2 Tbsp
Vanilla essence-1 tsp
Baking powder-1 tsp
Baking soda-1 tsp
Salt a pinch

METHOD:
  1. Puree or mash the bananas.
  2. Pre heat the oven to 350 deg F.
  3. Add the Flour,Baking powder,Baking soda and salt in a bowl and mix well.
  4. In another bowl add the butter,sugar,milk and vanilla essence and whisk  them till they are quite fluffy and finally add the pureed banana and whisk them again.Combine the flour mixture and banana mixture and mix well.

5.For preparing as a Banana Bread ,grease a 9x5" pan with butter else you can use a normal cake pan.Pour the mixture into the pan and bake them for about 50 minutes,or until a toothpick comes out clean when inserted into the middle of the cake.


SCRIBBLED NOTES:

  • Add walnuts,raisins,toasted almonds or chocolate chips to the mixture before baking as an addition to your sweet world!! :)
